Has anybody else heard the story that in ancient Jewish times, if the head of the house left the table during a meal, but intended to return, he would fold his napkin so the servant would know not to clear the table?

Does anybody have any sources on this or is this just another urban legend?

Welcome hubbim,  I would think it be an urban legend.
